Ingredients
Scale
Truffle Base
- 8 oz (225g) white chocolate, chopped
- 1/2 cup heavy cream
- 1/4 cup freeze-dried strawberries, crushed into powder
- 1/2 teaspoon vanilla extract
- Pinch of salt
Coating (Optional)
- Additional crushed freeze-dried strawberries or melted white chocolate for rolling
Instructions
- Melt the White Chocolate: In a heatproof bowl, place the chopped white chocolate. Heat the heavy cream in a small saucepan over medium heat until just simmering. Pour the hot cream over the white chocolate and let sit for 1-2 minutes, then stir gently until melted and smooth.
- Add Strawberry Flavor: Stir in the crushed freeze-dried strawberries, vanilla extract, and a pinch of salt until fully incorporated, giving the mixture a natural fruity flavor without adding moisture.
- Chill the Mixture: Cover the bowl tightly with plastic wrap and refrigerate for about 2 hours, or until the mixture is firm enough to scoop.
- Shape the Truffles: Use a small cookie scoop or spoon to portion out the firm mixture. Roll each portion between your palms to form smooth, round truffles.
- Coat the Truffles: Roll each truffle in either additional crushed freeze-dried strawberries or melted white chocolate for a glossy, colorful finish.
- Chill Again: Place the coated truffles on a parchment-lined baking sheet and refrigerate for another 30 minutes to fully set.
- Serve: Once set, enjoy immediately or store in an airtight container in the refrigerator for up to one week.
Notes
- Ensure the heavy cream is hot but not boiling to avoid seizing the white chocolate.
- Use freeze-dried strawberries to avoid adding moisture which can affect the truffle texture.
- For a glossy finish, temper the white chocolate if using for coating.
- Store truffles refrigerated to maintain shape and freshness.
- These truffles can be made up to 3 days in advance for convenience.
