Ingredients
Scale
Peach Filling
- 4 cups fresh or frozen peaches (sliced)
- 1/2 cup granulated sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 1/2 tsp ground cinnamon (optional)
Topping
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter (melted)
- 1/2 cup milk
- 1 tsp vanilla extract
Instructions
- Preheat and prepare dish: Preheat your oven to 375°F (190°C) and grease a 9×9-inch baking dish thoroughly to prevent sticking and promote even baking.
- Make the peach filling: In a large bowl, combine the sliced peaches, granulated sugar, lemon juice, cornstarch, and optional ground cinnamon. Mix well so the peaches are evenly coated, then set aside to allow the flavors to meld.
- Prepare the topping: In a separate bowl, whisk together the flour, sugar, baking powder, and salt until combined. Add the melted butter, milk, and vanilla extract, stirring just until the ingredients are incorporated to form a batter; do not overmix.
- Assemble the cobbler: Pour the peach filling into the prepared baking dish, spreading it out evenly. Drop spoonfuls of the topping batter over the peaches, then gently spread the topping evenly across the fruit surface.
- Bake: Place the baking dish into the preheated oven and bake for 35-40 minutes, or until the topping is a beautiful golden brown and the peach filling is bubbling around the edges.
- Cool and serve: Remove the cobbler from the oven and let it cool for 10-15 minutes. Serve warm, optionally topped with vanilla ice cream or whipped cream for an extra indulgent treat.
Notes
- Use frozen peaches if fresh are out of season, but thaw them beforehand for best results.
- If you prefer a less sweet cobbler, reduce the sugar in the filling or topping slightly.
- The cinnamon is optional but adds a lovely warm depth to the peach flavor.
- For a gluten-free version, substitute the all-purpose flour with a gluten-free baking blend.
- Allowing the cobbler to cool slightly before serving helps the filling set and makes slicing easier.
