  • 2 cups fresh or canned peaches, diced

Cinnamon Cookie Topping

  • 1 ½ cups vanilla wafer cookies, roughly crushed
  • 1 tablespoon butter
  • ½ teaspoon cinnamon


Instructions

  1. Prepare Cheesecake Base: In a large mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar, instant cheesecake pudding mix, and vanilla extract, then beat until all ingredients are well combined.
  2. Whip the Heavy Cream: Gradually add the heavy whipping cream to the mixture while beating continuously until the mixture becomes thick, smooth, and fluffy.
  3. Toast Cinnamon Cookies: In a separate small pan, melt the butter over medium heat. Add the crushed vanilla wafer cookies and cinnamon; toss to coat and lightly toast the mixture for 2–3 minutes, stirring frequently. Remove from heat and let cool.
  4. Combine Fruits and Cheesecake Mixture: Fold the peach pie filling and diced fresh peaches into the cheesecake mixture gently to keep the texture light and airy.
