- 2 large onions, thinly sliced
- 200g feta cheese, crumbled
- 1 cup all-purpose flour
- 1 tsp baking powder
- 2 eggs
- 1/4 cup fresh parsley, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- Vegetable oil, for frying (about 2 cups)
Sweet Chilli Soy Dipping Sauce
- 1/2 cup sweet chilli sauce
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp fresh lime juice
- 1 clove garlic, minced
- 1 tsp sesame oil
- 1 fresh red chilli, finely chopped (optional)
Instructions
- Prepare the fritter batter: In a large mixing bowl, combine the thinly sliced onions, crumbled feta cheese, all-purpose flour, baking powder, chopped fresh parsley, salt, and pepper. Mix well to distribute all ingredients evenly.
- Add eggs and mix batter: Crack the eggs into the bowl and mix thoroughly until a thick, cohesive batter forms. If the batter feels too stiff, add a small amount of water to loosen it slightly.
- Heat the oil: Pour vegetable oil into a deep frying pan or pot to a depth of about 1 inch. Heat over medium-high heat until it reaches approximately 350°F (175°C), the ideal temperature for frying.
- Fry the fritters: Using a heaped spoon, scoop portions of the batter and gently drop them into the hot oil. Avoid overcrowding the pan to maintain oil temperature.
- Cook until golden and crisp: Fry the fritters in batches, turning occasionally to ensure even cooking on both sides. Each side should take about 3 to 4 minutes until golden brown and crisp.
- Drain and rest: Remove the cooked fritters with a slotted spoon and place them on paper towels to drain excess oil.
- Prepare the dipping sauce: In a small bowl, whisk together sweet chilli sauce, soy sauce, rice vinegar, fresh lime juice, minced garlic, sesame oil, and finely chopped red chilli if using. Taste and adjust the balance by adding more lime juice for tanginess or sweet chilli sauce for extra sweetness.
- Serve: Arrange the warm fritters on a serving platter alongside the dipping sauce. Serve immediately for best texture and flavor.
Notes
- For extra heat, add more fresh red chilli or a dash of chilli flakes to the batter or sauce.
- Keep the oil at the right temperature to avoid greasy fritters; if oil is too cool, the fritters will absorb more oil.
