Instructions

  1. Prepare the cereal: Place the 6 cups of Rice Chex cereal into a large mixing bowl to be ready for coating.
  2. Melt the chocolate mixture: In a microwave-safe bowl, combine 1 ½ cups white chocolate chips and 1 tablespoon unsalted butter. Microwave in 30-second intervals, stirring thoroughly between each interval until the mixture is fully melted and smooth.
  3. Add lemon flavor and color: Stir in 2 tablespoons lemon juice and 1 tablespoon lemon zest until the mixture is evenly combined. If desired, add a drop or two of yellow food coloring to achieve a brighter, more vibrant yellow color.
  4. Coat the cereal: Pour the melted lemony white chocolate mixture over the Rice Chex cereal. Gently fold and stir the mixture to ensure every piece of cereal is evenly coated.
