Instructions
- Prepare the cereal: Place the 6 cups of Rice Chex cereal into a large mixing bowl to be ready for coating.
- Melt the chocolate mixture: In a microwave-safe bowl, combine 1 ½ cups white chocolate chips and 1 tablespoon unsalted butter. Microwave in 30-second intervals, stirring thoroughly between each interval until the mixture is fully melted and smooth.
- Add lemon flavor and color: Stir in 2 tablespoons lemon juice and 1 tablespoon lemon zest until the mixture is evenly combined. If desired, add a drop or two of yellow food coloring to achieve a brighter, more vibrant yellow color.
- Coat the cereal: Pour the melted lemony white chocolate mixture over the Rice Chex cereal. Gently fold and stir the mixture to ensure every piece of cereal is evenly coated.
- Mix the dry coating: In a large zip-top bag or sealed container, combine 1 ½ cups powdered sugar and the dry lemon pudding mix. Close the container tightly.
- Coat the cereal with dry mix: Add the coated cereal pieces to the sugar and pudding mix container, seal it well, and shake vigorously until all pieces are well coated and powdery.
- Set the puppy chow: Spread the coated cereal mixture onto a parchment-lined baking sheet to cool and set for 15 to 20 minutes at room temperature.
