Ingredients
Scale
Steak Bites
- 1 lb sirloin steak, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
Baked Potatoes
- 4 large russet potatoes
- 2 tablespoons olive oil
- Salt for seasoning the potatoes
Toppings
- 1/2 cup shredded cheddar cheese
- 1/2 cup sour cream
- 4 slices cooked bacon, crumbled
- 2 green onions, chopped
- 1 tablespoon butter (optional)
Instructions
- Prepare the Baked Potatoes: Preheat your oven to 400°F (200°C). Wash the russet potatoes thoroughly and pat them dry. Rub each potato with olive oil and sprinkle with salt evenly to ensure crispy skin.
- Bake the Potatoes: Place the potatoes directly on the oven rack and bake for about 45-60 minutes until they are tender when pierced with a fork.
- Cook the Steak Bites: While the potatoes are baking, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the steak pieces with garlic powder, onion powder, smoked paprika, salt, and pepper. Add the steak bites to the skillet and cook for about 3-5 minutes per side until they reach your desired level of doneness and develop a nice sear.
- Prepare the Loaded Potatoes: Once the baked potatoes are ready, carefully slice them open lengthwise. Fluff the inside with a fork and optionally add 1 tablespoon of butter to each potato to add richness.
- Add Cheese and Melt: Sprinkle shredded cheddar cheese generously inside each open potato. Place the potatoes back in the oven or under a broiler for a few minutes to melt the cheese thoroughly.
- Top with Sour Cream and Bacon: Remove the melted loaded potatoes from the oven and top each with sour cream, crumbled cooked bacon, and chopped green onions.
- Finish with Steak Bites: Finally, add the cooked steak bites on top of each loaded potato for a hearty and flavorful finish. Serve immediately while hot.
Notes
- For extra flavor, marinate the steak bites in olive oil and spices for 30 minutes before cooking.
- You can use a fork to test if the potatoes are done; they should be soft inside.
- Feel free to swap cheddar cheese with your favorite cheese like Monterey Jack or mozzarella.
- To save time, bake the potatoes in the microwave for 8-10 minutes before finishing them in the oven for crispiness.
- Leftover steak bites and loaded potatoes can be refrigerated and reheated for a quick meal.
