Ingredients
Scale
Main Ingredients
- 8 ounces lo mein noodles (or spaghetti, linguine, or ramen noodles)
- 1 pound lean ground beef
- 1 tablespoon olive oil
- ½ medium onion, thinly sliced
- 1 medium red bell pepper, thinly sliced
- 5 ounces cremini mushrooms, sliced
- 1 cup snow peas or sugar snap peas
- Salt and pepper, to taste
- Chopped scallions, for garnish (optional)
Sauce Ingredients
- ¾ cup beef broth (or water)
- ¼ cup hoisin sauce
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon sriracha sauce
- 1 teaspoon apple cider vinegar or rice vinegar
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1 teaspoon freshly grated ginger
- 2 cloves garlic, minced
Instructions
- Prep Ingredients and Make Sauce: Prepare all ingredients as listed by slicing the onion, bell pepper, mushrooms, and chopping the garlic and ginger. In a bowl, whisk together all sauce ingredients including beef broth, hoisin sauce, soy sauce, sriracha, vinegar, brown sugar, cornstarch, ginger, and garlic until smooth.
- Cook Noodles: Cook the lo mein noodles according to package directions until al dente. Once cooked, drain them well and set aside to prevent overcooking.
- Brown Beef: Heat a large skillet over medium-high heat and add the ground beef. Cook until browned, breaking it up with a spoon. Drain any excess fat if necessary, then remove the beef from the skillet and set aside.
- Sauté Vegetables: Using the same skillet, add olive oil and sauté the sliced onions until softened, about 2-3 minutes. Next, add the bell peppers, mushrooms, and snow peas. Cook the vegetables until they are tender-crisp, which typically takes about 4-5 minutes.
- Combine and Finish: Return the cooked ground beef to the skillet with the vegetables. Pour in the prepared sauce and bring it to a simmer over medium heat. Allow the sauce to cook and thicken slightly, coating the beef and vegetables evenly.
- Toss with Noodles: Remove the skillet from heat and add the cooked noodles. Toss everything together thoroughly so the noodles are well coated with the flavorful sauce and mixed evenly with beef and vegetables. Season with salt and pepper to taste.
- Serve: Garnish with chopped scallions if desired and serve immediately while warm.
