Rice & Flavorings

  • 4 cloves garlic, minced
  • 1 cup long grain white rice, uncooked
  • 2 1/4 cups low-sodium chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1 tablespoon chopped fresh parsley (optional)


Instructions

  1. Cook the chicken: Heat olive oil in a large skillet over medium heat. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook for 5–6 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  2. Sauté the garlic: In the same skillet, add the minced garlic and cook for about 1 minute until fragrant, taking care not to burn it.
  3. Toast the rice: Stir in the uncooked rice with the garlic and toast it for 2 minutes, stirring frequently to coat the grains and develop flavor.
  4. Add broth and simmer: Pour in the chicken broth, bring the mixture to a simmer over medium heat, then reduce the heat to low. Cover the skillet and cook for 15–18 minutes until the rice is tender and the liquid has been absorbed.
  5. Combine and finish: Remove the skillet from heat. Stir the cooked chicken, grated Parmesan cheese, and butter into the rice until the mixture becomes creamy and well combined.
  6. Garnish and serve: Optionally, sprinkle chopped fresh parsley on top before serving for a fresh flavor and vibrant presentation.
