Description

This Crispy Potato, Egg & Cheese Taco recipe is a perfect breakfast or brunch option that combines golden, crispy potatoes with soft scrambled eggs and melted cheddar cheese, all wrapped in warm flour tortillas. Easy to prepare and customizable with your favorite toppings, these tacos deliver a satisfying blend of textures and flavors.

Ingredients

Scale

Main Ingredients

  • 2 medium potatoes, peeled and diced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese (or your preferred cheese)
  • 4 small flour tortillas
  • 1 tablespoon butter (for cooking eggs)

Optional Toppings

  • Salsa
  • Avocado, sliced
  • Sour cream
  • Hot sauce
  • Chopped cilantro

Instructions

  1. Prepare the potatoes: Heat the olive oil in a large skillet over medium heat. Add the peeled and diced potatoes, season with salt and pepper. Cook, stirring occasionally, for about 10-12 minutes until the potatoes are crispy and golden brown. Remove from the skillet and set aside.
  2. Scramble the eggs: In the same skillet, melt the butter over medium-low heat. Crack the eggs into a bowl, whisk them thoroughly, then pour into the skillet. Gently scramble the eggs until fully cooked but still soft and creamy. Remove from heat and set aside.
  3. Warm the tortillas: Warm the flour tortillas in a dry skillet or microwave for a few seconds until soft and pliable.
  4. Assemble the tacos: Place a portion of the crispy potatoes in the center of each tortilla. Top with a generous spoonful of scrambled eggs, followed by a sprinkle of shredded cheddar cheese.
  5. Add toppings and serve: Garnish the tacos with your choice of optional toppings such as salsa, sliced avocado, sour cream, hot sauce, or chopped cilantro. Serve immediately while the cheese is still melted and the potatoes are crispy.

Notes

  • Using medium heat for frying potatoes helps achieve a crispy exterior without burning.
  • Feel free to substitute cheddar cheese with any preferred cheese like pepper jack or Monterey Jack.
  • For a gluten-free version, use corn tortillas instead of flour tortillas.
  • If you prefer your eggs firmer or softer, adjust cooking time accordingly during scrambling.
  • Optional toppings can be adjusted based on personal preference to add freshness or spice.
