Description

These Brownie Protein Bites are a delicious and healthy snack made from Medjool dates, sunflower seed butter, protein powder, and cocoa. They are naturally sweet, packed with protein, and can be enjoyed plain or dipped in rich dark chocolate for an extra indulgence. Perfect as a quick energy boost or a guilt-free treat.

Chocolate Coating (Optional)

  • ½ cup dark chocolate
  • ½ tsp coconut oil


Instructions

  1. Soften the Dates: Remove the pits from your Medjool dates and soak them in hot water for 5 minutes to soften them. This helps create a chewier texture and makes blending easier.
  2. Blend Base Ingredients: Drain the water off the dates and place them in a food processor with the sunflower seed butter and vanilla extract. Blend until the mixture becomes a thick, sticky caramel-like consistency.
  3. Add Remaining Ingredients: Add the protein powder, cocoa powder, and a pinch of salt to the mixture. Blend again until all ingredients are fully incorporated, scraping down the sides as needed.
  4. Form the Bites: Scoop out portions of the dough roughly one tablespoon each and roll them into balls by hand.
  5. Chill the Bites: Place the balls on a lined baking sheet and freeze for at least 30 minutes if you plan to coat them in chocolate. Otherwise, they can be eaten as-is.
  6. Melt the Chocolate: In a small microwave-safe dish, combine the dark chocolate and coconut oil. Microwave in 20-30 second intervals, stirring between each, until completely melted and smooth.
  7. Dip and Set: Dip each chilled brownie bite into the melted chocolate, coating it thoroughly, then place back onto the lined baking sheet to set. Allow the chocolate to harden before serving.

Notes

  • You can omit the chocolate coating for a simpler, faster snack.
  • Use any protein powder you prefer—whey, plant-based, or collagen work well.
  • Store the bites in an airtight container in the refrigerator for up to one week or freeze for longer storage.
