Description
These Blueberry Swirl Yogurt Bites are a delicious and refreshing frozen treat, combining creamy Greek yogurt with a naturally sweetened blueberry compote swirl. Perfect as a healthy snack or dessert, they are easy to make and require just a few simple ingredients.
Ingredients
Scale
Yogurt Base
- 1 cup Greek yogurt (full-fat for creaminess)
- 1/2 tsp vanilla extract
- Extra honey or maple syrup to taste (optional)
Blueberry Compote
- 1/2 cup blueberries (fresh or frozen)
- 2 tbsp honey or maple syrup
- 1 tsp lemon juice
- 1 tsp cornstarch (optional, for thickening)
- 1 tbsp water (to mix with cornstarch, if using)
Instructions
- Make the Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, honey or maple syrup, and lemon juice. Simmer for about 5 minutes, stirring occasionally until the blueberries soften and break down slightly. For a thicker compote, dissolve the cornstarch in 1 tablespoon water and stir into the simmering berries. Remove from heat and let cool completely before using.
- Prepare the Yogurt Base: In a mixing bowl, stir together the Greek yogurt and vanilla extract until smooth and creamy. Taste and add extra honey or maple syrup if you prefer a sweeter flavor.
- Fill the Molds: Spoon the yogurt mixture into silicone molds or a mini muffin tin, filling each cavity about three-quarters full to allow room for the blueberry swirl.
- Add the Blueberry Swirl: Place a small spoonful of the cooled blueberry compote on top of each yogurt-filled mold. Use a toothpick or skewer to gently swirl the compote into the yogurt, creating a marbled effect.
- Freeze: Transfer the molds to the freezer and freeze for at least 3 hours, or until the bites are solid and fully set.
- Unmold and Serve: Once frozen, pop the yogurt bites out of the molds and transfer to an airtight container. Store in the freezer. For best texture, let each bite sit at room temperature for 2–3 minutes before eating.
Notes
- Using full-fat Greek yogurt gives the bites a creamier texture.
- Fresh or frozen blueberries can be used interchangeably for the compote.
- Cornstarch is optional and only needed if you want a thicker compote swirl.
- These bites should be stored frozen and are perfect for a quick, healthy snack.
- Allowing the bites to soften slightly at room temperature improves texture and flavor.
