Description

Delight in these elegant Berry Tartlets featuring a crisp, buttery pastry shell filled with luscious vanilla whipped cream and topped with a vibrant mixture of fresh strawberries, blueberries, and raspberries. Perfect for a light dessert or an impressive treat for gatherings, these tartlets combine classic flavors with a beautiful presentation.

Ingredients

Scale

Pastry Dough

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted cold butter
  • ¼ cup granulated sugar

Filling & Topping

  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Create Pastry Dough: In a mixing bowl, combine the all-purpose flour and granulated sugar. Cut in the cold unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  2. Chill Dough: Wrap the dough in plastic wrap and refrigerate for 30 minutes. This step helps prevent shrinkage during baking.
  3. Preheat Oven & Prepare Dough: Preheat your oven to 375°F (190°C). Roll out the chilled dough on a floured surface to about 1/8 inch thickness and cut into circles sized to fit muffin tins.
  4. Bake Pastry Shells: Press each dough circle gently into the muffin tins to form tartlet shells. Bake for 15-20 minutes or until the edges turn a golden brown. Remove and allow to cool completely in the tins before removing.
  5. Whip Cream Filling: In a chilled bowl, whip the heavy cream along with the powdered sugar and vanilla extract until soft peaks form, creating a smooth, fluffy filling.
  6. Assemble Tartlets: Carefully fill each cooled pastry shell with the whipped cream. Top generously with the fresh mixed berries to finish.

Notes

  • Ensure the butter is cold to achieve a flaky pastry texture.
  • For extra flavor, you can add a pinch of salt to the dough.
  • Use a chilled bowl and beaters when whipping cream for better volume.
  • Serve the tartlets immediately or keep them chilled until serving to maintain freshness.
  • Feel free to substitute or add other fresh fruits according to seasonal availability.
